泥鰍鉆豆腐
做法較為復(fù)雜獨(dú)特，先將泥鰍放養(yǎng)于清水中數(shù)日，待其肚中泥沙吐盡，再取豬油若干，雞蛋數(shù)個(gè)，乘泥鰍饑餓之時(shí)投入讓其將豬油雞蛋吃完，再取嫩豆腐數(shù)塊，將泥鰍拌清水置入鍋內(nèi)加蓋，慢慢加熱。泥鰍鉆入豆腐內(nèi)死去，逐旺火讓泥鰍肚內(nèi)的豬油冒出來，再拌紫蘇葉等佐料上火鍋，其味妙不可言；（口味清淡）
