過年的時(shí)候,土家人除了要吃表示霉氣盡頭、年年有余、清清白白的芋頭、魚、豆腐、青菜外,臘豬頭與臘豬屁股肉,更是土家人必不可少的兩樣,因?yàn)檫@代表有頭有尾,有始有終。春節(jié)團(tuán)圓,來年平安,自然而然,臘肉也就成了土家族年的符號(hào)與象征,成為最能代表春節(jié)的年味。
土家人居住在武陵山區(qū),山高路遠(yuǎn),難得出一次山,長(zhǎng)期過著自給自足的半隱居生活。養(yǎng)豬種糧,不過是為了保障一年的生計(jì)所需,養(yǎng)豬以野草與粗糧為主,豬肉細(xì)膩嫩滑。
每至臘月,土家人都要宰殺年豬,宰殺后的豬被分成一條一條,置于大缸中鹽腌制一星期,然后掛在自家火坑上面熏制,土家人會(huì)時(shí)不時(shí)往火堆里扔一些桔子皮(陳皮)、肉桂樹枝、山胡椒樹枝、花椒樹枝、茶子殼(油茶外殼殘?jiān)?、新鮮的柏樹松樹丫枝等一起熏,使其色澤紅亮香味濃郁,久放不壞,以保證來年一年都有肉吃。
